Easy Romanian Semolina Pudding

A comforting, old-world Romanian dessert made from warm milk, fine semolina, and a touch of vanilla. Light, creamy, and ready in under 20 minutes, this nostalgic pudding is perfect for breakfast or dessert. Serve it warm or chilled with classic toppings like cinnamon, cocoa, fruit jam, or melted chocolate.

Ingredients You’ll Need

Here’s what you’ll need to make this classic Romanian semolina pudding:

Milk: The creamy base of the pudding — whole or 1% both work well.
Semolina: Fine wheat semolina that thickens the mixture into a smooth, velvety pudding.
Sugar: Sweetens the pudding; adjust based on how sweet you like it.
Vanilla Extract: Adds warm, aromatic flavour and enhances the classic taste.
Optional Toppings:

  • Cinnamon or Cocoa: For a warm, aromatic finish.
  • Fruit Jam or Fresh Fruit: Traditional Romanian topping that adds brightness and sweetness.
  • Melted Chocolate or Chocolate Sprinkles: Richer, dessert-style option kids love.

Step 1 – Heat the milk:

Pour the milk into a medium saucepan and add the sugar. Warm it over medium heat until the milk is hot but not boiling. Heating it gradually prevents scalding and ensures a smooth pudding.

Step 2 – Add the semolina:

While whisking continuously, slowly sprinkle the semolina into the warm milk. Adding it gradually keeps the mixture lump-free and silky.

Step 3 – Cook until thickened:

Continue cooking over medium-low heat for 5–10 minutes, whisking often. The pudding is ready when it thickens and coats the back of a spoon with a creamy, custard-like texture.

Step 4 – Flavour it:

Remove the saucepan from the heat and stir in the vanilla extract. This adds aroma and enhances the classic Romanian flavour.

Step 5 – Portion the pudding:

Pour the hot pudding into bowls or dessert cups. If you want it to set thicker, let it cool; if you prefer it soft and cozy, serve immediately.

Step 6 – Add toppings (optional):

Finish with your favourite toppings:

  • Cinnamon or cocoa for a warm, simple finish
  • A spoonful of fruit jam or fresh fruit
  • Melted chocolate, caramel, or chocolate sprinkles for extra richness

Step 7 – Serve:

Enjoy warm for the most traditional experience, or chill it for a firmer, pudding-like dessert.

Servings: 4 people

Ingredients

  • 2 cups milk (500 mL)
  • ¼ cup semolina (grits) (50 g)
  • 2-4 tbsp sugar (30–50 g), depending on taste
  • 1 tsp vanilla extract
  • Optional toppings: cinnamon, cocoa, fruit jam, chocolate sprinkles, or melted chocolate

Instructions

  • Pour milk into a medium saucepan. Add a sugar. Heat gently over medium heat until it’s warm, but not boiling.
  • Slowly sprinkle semolina into the milk while whisking continuously to avoid lumps.
  • Continue to cook over medium-low heat for 5–10 minutes, whisking frequently, until the mixture thickens to a creamy consistency. It should coat the back of a spoon.
  • Remove from heat and stir in vanilla extract.
  • Pour the pudding into bowls or dessert cups. Serve warm or chilled.
  • Add optional toppings.

Notes

  • Semolina type matters: Use fine wheat semolina (not cornmeal or coarse grits). Coarse varieties will give a grainy texture and take longer to thicken.
  • Add semolina slowly: Sprinkle it in gradually while whisking to prevent lumps. Once lumps form, they’re hard to fix.
  • Thickness: The pudding will thicken slightly after taking it off the heat.
  • Control the thickness:
    • Cook 5–7 minutes for a softer, spoonable pudding.
    • Cook 8–10 minutes for a firmer texture that sets well when chilled.
